Monster cookies are one of my favorite cookies to bake and eat- they’re easy to make and so delicious! Now that holiday season is in full swing, I’ve been thinking a lot about all the yummy homemade cookies my mom made this time of year when I was a kid. She used to make a dozen varieties from scratch every year to give as gifts. Monster cookies were always one of my favorites. I love to make them with my kids since they’re so easy. There’s no rolling, cutting, sifting, or icing. Just mix, form into balls and bake. Easy and delicious, that’s my kind of cookie!plate of homemade monster cookies

Monster Cookies aren’t made with any flour and can easily be made with gluten free oats if you are gluten free. Our family is not gluten free but I know enough folks who are. When it comes to baking cookies for holiday gift giving or taking them to Christmas parties, these Monster Cookies are a great choice.

This recipe makes about four dozen cookies. You read that right! That’s 48 cookies, a whopper batch that is perfect for gift giving or a holiday party.

Monster Cookie Recipe:

Ingredients: 

-3 eggs

-1 cup brown sugar (this is the kind we use-it is organic and fair trade)

-1 cup unrefined sugar

-1 TBS vanilla extract (here’s how to make your own-it is so easy!)

-2 tsp baking soda

-1/2 cup chopped walnuts

-1/2 cup butter softened

-1 1/2 cups peanut butter

-5 cups oats (use gluten free oats if you’re making gluten free cookies)

-2 cups chocolate chips

Monster Cookie Recipe Directions: 

1. Mix ingredients in order on the ingredient list.

2. Form into tablespoon size balls and place on baking sheet.

3. Bake at 350 degrees for 10-12 minutes

4. Remove from the oven and let cool on the pan several minutes before placing on a wire rack to cool.

5. Eat and enjoy!
